Here is the recipe for chocolate spread roll cake that my grandmother and my mother make every year.
It’s a simple, quick cake that is often a hit at end-of-year meals.

Mix 5 egg yolks with 120g of sugar, then in another bowl, beat the 5 egg whites until stiff.

Add 120g of flour to the egg yolk and sugar mixture.

This gives a thick mixture. This is normal.

Gently add the egg whites into this mixture.

Spread the dough on a rectangular dish or on a previously buttered baking sheet.

Cook for 7 min at 200 degrees (preheat the oven first)

Immediately remove the dough from the mold using a damp cloth that you will place on the dough while turning the cake over.

Spread the spread on the cake and roll the cake as you go using the damp cloth.

Sprinkle with icing sugar.

Possibility of adding a final layer of spread on top.

My secret is that I boil water with rum (pregnant women and children, please refrain), and sugar and I sprinkle my log with this mixture so that the log softens. Be generous without making the cake too soaked either. You need a happy medium.

Different versions with homemade jam or chocolate instead of spread.
